You probably know I love saladsโluckily, my family does too! They even order them when we eat out. I think itโs because I always make salads with the best toppings and homemade dressings.
This dressing is creamy, sweet, slightly tangy, and perfect for summer. I canโt wait for you to try it!

Ingredients
- Fresh strawberries: The riper, the better! Avoid mushy berries.
- Water: Helps thin out the strawberry vinaigrette.
- Balsamic vinegar: Thicker than regular vinegar with a sweet-tart flavor that pairs well with strawberries.
- Minced shallot: In a pinch minced onion will work.
- Dijon mustard: I love Grey Pouponยฎ Dijon (not sponsored, just a fan).
- Honey: Use more if the strawberries arenโt very sweet.
- Salt and pepper: I prefer fine sea salt and freshly cracked pepper.
- Olive oil: Adds flavor and helps mix the dressing with the vinegar.
Strawberry Vinaigrette Recipe Tips
- Use good ingredients. Sweet, ripe strawberries and extra virgin olive oil make a big difference.
- Taste and tweak. Blend the dressing, then taste it. Add honey slowly if you want it less sweet, or a little more mustard or balsamic for extra tang.
- Chill before using. If you can, make the dressing early, put it in a jar, and refrigerate.
- Make less. This recipe makes a lotโenough for two or three salads. Cut it in half if needed.

How To Use Strawberry Vinaigrette
Use this Strawberry Vinaigrette Recipe on a berry and fruit salad with cheese and nuts.
Try it with:
- Roasted Carrots: Drizzle over cooled carrots.
- Spring Quinoa Salad: Use this instead of lemon dressing.
- Flank Steak Salad: Add steak to greens, spoon on strawberry salsa, and drizzle with this dressing.
- Kale Salad: Rub kale (see how in this kale salad recipe), then toss with this dressing and berries.

Storage
Store in an airtight container in the fridge for up to two days. Olive oil may get solidโjust shake to mix. If still clumpy, let it sit at room temp for 15โ20 mins, then shake again.

- 1 cup sliced strawberries
- 2 tablespoons water
- 1/4 cup balsamic vinegar
- 1 tablespoon minced shallot
- 1 teaspoon Dijon-style mustard
- 1 teaspoon honey
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 cup olive oil
- 5 ounces spring mix lettuce blend 6 cups; I use 50/50 blend spinach and spring mix leaves
- 1 large ripe peach sliced into wedges, pit removed
- 1 cup strawberries sliced in half
- 1/2 cup blackberries
- 1/2 cup sliced honey roasted almonds I buy these pre-made!
- 1/3 cup goat cheese or feta cheese
Instructionsย
- Add strawberries, water, balsamic vinegar, shallots, mustard, honey, salt, and pepper to a small blender. Blend on high until a smooth puree is formed, about 10 seconds.
- Add in olive oil and blend until the dressing is thickened and emulsified. Taste and adjust the seasoning as desired. Transfer dressing to a jar and refrigerate until ready to serve.
- Wash and completely dry fruit. In a large bowl, add the mixed green lettuce. Only add almonds, cheese, and dressing to the portions that will be eaten the same day. Top with sliced peaches, sliced strawberries, blackberries, almonds, and goat cheese. Right before serving, add the desired amount of dressing to the salad. I use just over 1/3 of the dressing on this salad.
