I donโ€™t eat vegetarian all the time, but I end up making meatless meals way more often than I probably realize. Theyโ€™re just easier, most of the ingredients are already in my kitchen, they come together fast, and I donโ€™t need a big plan to make something good. And if youโ€™ve followed me for any amount of time, you probably know Iโ€™ve got several vegetarian family members, so Iโ€™m always thinking about meals that will work for everyone at the table.

Iโ€™m also pretty determined to make those meals taste just as good as anything with meat, not like a โ€œless thanโ€ version. Honestly, a lot of the time these are the dishes everyone goes back for, not just the vegetarians.

There are so many nights when itโ€™s already late, everyoneโ€™s hungry, and I need something quick that I know will actually get eaten. Thatโ€™s where these recipes come in. Theyโ€™re simple, filling, and full of flavor without a lot of effort.
