This Banana Sandwich Tastes Like Pure Nostalgia!

Iโ€™ve always loved a good banana and honey sandwich. Itโ€™s one of those simple combos that just worksโ€ฆ sweet, soft, and so satisfying, and thereโ€™s something about it that feels instantly nostalgic, even if you didnโ€™t grow up eating them. And if you didnโ€™t, itโ€™s seriously not too late. This is one of those recipes that feels familiar the second you try it.

The version Iโ€™ve always loved is super simple, but once I started experimenting, I knew it could be even better. I added mascarpone one day on a whim, and it completely changed the sandwich. It makes everything extra creamy and a little more rich, almost like a dessert filling, and once itโ€™s grilled with buttery bread, it takes that classic banana and honey combo and turns it into something next level.

How To Make A Honey Banana Sandwich

  1. Spread mascarpone on one slice of thick bread.
  2. Add banana slices (ยฝ- to ยพ-inch thick) to the other slice.

Ingredients

  • 2 slices brioche bread I like Sara Leeยฎ Artesanoโ„ข Brioche
  • 1-1/2 tablespoons mascarpone cheese
  • 1/2 large banana
  • 2 teaspoons honey
  • 1/8 to 1/4 teaspoon cinnamon
  • 4 teaspoons unsalted butter

Instructionsย 

  • Lay out the pieces of bread. Spread mascarpone cheese on one side of one piece of bread. Cut bananas into thick (1/2 to 3/4-inch thick) slices and place them on the other piece of bread. Drizzle honey all over the bananasโ€”add to taste (I like about 2 teaspoons). Sprinkle cinnamon to taste right on topโ€”about 1/8 to 1/4 teaspoon, depending on preference. Place the piece of bread with mascarpone cheese on top of the bread with bananas. Smooth butter on that top piece of bread (facing outwards).
  • Preheat a griddle or pan to medium-high heat. Add the sandwich, buttered side down. Cook for 2โ€“3 minutes or until lightly browned. While the sandwich is cooking, spread butter on the side of bread facing you that hasnโ€™t been buttered yet. Using a large spatula, flip the sandwich and cook another 2โ€“3 minutes.
  • Remove from heat, slice in half, and enjoy.
