The Dinner Everyoneโs Talking About!
For a full week straight, I kept seeing versions of this One Pan Dumpling Dinner all over my social media feeds. After grabbing my fourth loaf of Trader Joeโs Focaccia for my new favorite dinner, I finally tossed some of their wontons in my cart too, plus the squiggly noodles I always buy for these beef noodle bowls. (If youโre as Trader Joeโsโobsessed as I am, youโll love my new collection of Trader Joeโs recipes)
The first version I tried ended up a little too sweet for me, so I played around with it. I added garlic, ginger, some seasonings, and a bit more curry paste. Those tweaks balanced the coconut milk so nicely, but the real secret is Trader Joeโs crunchy chili onion. Iโve tried a lot of chili oils, and honestly, nothing comes even close to this one. If you have a TJโs nearby, youโve got to try it!

- 1 can (13.5-ounces) coconut milk full-fat, not light
- 1 tablespoon garlic paste
- 1 tablespoon ginger paste
- 2 teaspoons yellow curry powder
- 3 tablespoons red curry paste I use Thai Kitchen; reduce or increase as desired for spice levels
- 2 teaspoons ground coriander
- 1/2 teaspoon chili powder
- Salt and pepper 1/4 teaspoon each
- 1 lime 1 tablespoon juice
- 1 tablespoon rice vinegar
- 2 tablespoons soy sauce
- 2 cups coarsely chopped baby spinach
- 1 package chicken wontons or pork, see note 1
- 1 tablespoon toasted sesame oil
- 1/4 cup cilantro diced
- 1/4 cup green onions thinly sliced
- sesame seeds toasted, if possible
- chili-crunch lots of this; yum!
- cooked white rice optional, for serving
Instructionsย
- Heat oven to 400ยฐF. Lightly grease a 9ร13-inch baking dish.
- In the 9ร13-inch pan, whisk together the coconut milk, garlic paste, ginger paste, curry powder, red curry paste, coriander, chili powder, salt & pepper (I add 1/4 tsp each), lime juice, rice vinegar, and soy sauce until smooth.
- Stir in the spinach, then arrange the frozen wontons evenly in the sauce. Press them down gently so theyโre mostly coated in sauce.
- Bake, uncovered, for 20 minutes.
- Remove from the oven, drizzle toasted sesame oil on top, stir gently, and flip the wontons so theyโre fully covered in sauce. Taste and adjust for seasoning.
- Top with cilantro, green onions, sesame seeds, and a good drizzle of chili crunch. Serve immediately as-is or over rice.

I havenโt tested this with anything other than coconut milk so I canโt say for sure! Iโm so sorry!
I just made this recipe for the third timeโit is a hit at my house. However, I decided that I will use less red curry paste next time. I use the Mae Ploy red curry paste which is pretty spicy. Next time Iโm hoping I remember to try just 1 tablespoon. We had to eat it with rice because it was so spicy but I think I would want to always serve it with rice anyway. I also tried the Trader Joeโs potstickers and they are perfect for this recipeโjust the right amount for a 9X13 pan. Iโve done the pork and the chicken potstickers but we really canโt taste a difference. Thanks for introducing us to the Trader Joeโs chili crunch too.

A LOT of people have posted their version of this popular โdumpling bakeโ. Every single one COVERS the dish with foil before baking, but you do not. Is there a reason for that? Iโd like to try this. Thanks
