Dessert For Breakfast Vibes!

When peaches are in season, I canโ€™t get enough of them, especially in desserts like peach pie and cobbler.

To avoid eating half a pie, I added them to my go-to breakfast: overnight oats. This is my first fruit-filled oat recipe and itโ€™s a winner! Creamy oats with caramelized peaches and streusel, like dessert for breakfast!

While this recipe takes more time than most, itโ€™s worth it. If youโ€™re short on time, skip the streusel and caramelizing the peaches and just stir them in for a simpler version. Itโ€™s still delicious!

Letโ€™s talk yogurt

The key ingredient in overnight oats is the yogurt. I love using Greek Godsยฎ Honey Vanilla Yogurt (not sponsored), but any yogurt you enjoy plain will work.

If you donโ€™t like it straight from the container, you probably wonโ€™t love the flavor in the Peach Cobbler Overnight Oats.

I recommend full-fat Greek yogurt with honey or vanilla for the best flavor and texture. Full-fat yogurt thickens the oats much better than low-fat varieties.

Other Ingredients

  • Milk: Any milk works here, but I like unsweetened vanilla almond milk.
  • Oats: Old-fashioned oats are best for texture. Steel-cut oats are too chewy, and quick oats absorb more liquid, leaving less texture.
  • Maple syrup: My go-to sweetener for overnight oats. Adjust the amount to your taste, but I recommend 1 to 2 tbsp. Liquid stevia is a zero-calorie alternative.
  • Vanilla: Adds a nice flavor boost, though not essential if you donโ€™t have it.
  • Salt: A pinch enhances flavors and balances the ingredients.
  • Cinnamon: A sprinkle complements the peaches and oats!

Peach Cobbler Overnight Oat Toppings

  • Peaches: Use ripe, fresh peaches for the best flavor. To check if a peach is ripe, gently squeeze it. If it gives a little, itโ€™s ripe or almost ripe.
  • Look for a deep yellow color and a sweet peach smell. Wrinkled skin around the stem shows itโ€™s ripe, but avoid peaches that are too wrinkled, as theyโ€™re overripe.
  • Streusel: The streusel topping adds a nice crunch and flavor contrast.ย

Store peach overnight oats in an airtight container in the fridge. Theyโ€™ll last for up to 3 days.

Simple Peach Cobbler Overnight Oats

  • 1 large ripe peach finely chopped
  • 1/2 tablespoon coconut oil
Streusel
  • 1/2 tablespoon coconut oil
  • 1 tablespoon old-fashioned oats
  • 1/2 tablespoon white whole wheat flour or all-purpose flour
  • 1/2 tablespoon light brown sugar
  • 1/8 teaspoon ground cinnamon

Instructionsย 

  • In a small bowl, stir together oats, milk, yogurt, maple syrup (see note 1), 1/2 teaspoon vanilla extract, cinnamon, and salt. Place in an sealed container and refrigerate overnight or for at least an hour.
  • Peaches: In the morning, remove the pit from the peach and chop finely. Combine the chopped peach with the coconut oil and the remaining 1/2 teaspoon vanilla extract in a skillet over medium-low heat. Stir until the peach is tender and fragrant. Allow to cool slightly.
  • Streusel: Melt the coconut oil in the same skillet used for the peach. Add the remaining streusel ingredients and combine well. Cook and stir over medium-low heat until the oats are lightly crisp and fragrant, about 2 minutes.
  • Stir the cooled peaches into the oats and top with the warm streusel. Serve immediately.

Recipe Notes

Note 1: Scale the sweetener up or down, according to how sweet you like your oats. I recommend at least 1 tablespoon and up to 2 tablespoons of the maple syrup for a sweeter breakfast. Substitute 1/4 teaspoon liquid stevia in place of the syrup for a natural, zero-calorie sweetener.
