Sโmores Cereal Bars are one of my momโs signature desserts. She didnโt come up with the recipe (pretty sure itโs from the back of a cereal box), but sheโs made them for years and is basically โfamousโ for them with family and friends.
If you love sโmores, youโll be hookedโgraham cereal, gooey marshmallows, and melty chocolate. They always disappear first at any party.
Theyโve been one of my favorite treats for as long as I can remember, and even after way too many over the years, I still donโt think Iโll ever get tired of them!

Sโmores Cereal Bars Ingredients
- Graham cereal: Use any kind you likeโGolden Grahamsยฎ or a store-brand version.
- Marshmallows: Softer marshmallows make chewier barsโpick the squishiest bag.
- Chocolate chips: Pick a good brand so the chocolate melts nicely and tastes rich.
- Butter + corn syrup: These help everything stick and keep the bars soft.
- Vanilla: Adds a subtle sweetness and depth to the bars.
How To Make Sโmores Cereal Bars (Tips)
- Grease the pan: Spray well or use parchment so the bars donโt stick.
- Microwave slowly: Heat in short bursts, stirring well each time.
- Donโt press too hard: Gently press the mixture into the pan so bars stay soft.
- Use a big bowl: Mixing is easier (and less messy) in a very large bowl.

Storage
Sโmores Cereal Bars are best the day theyโre madeโafter that, they start to harden and lose texture. They donโt freeze well since the marshmallows get hard after thawing.

- 8 cups Golden Grahams cereal see note 1
- 6 cups miniature marshmallows divided
- 2 cups milk chocolate chips divided, see note 2
- 5 tablespoons unsalted butter cut into cubes
- 1/4 cup light corn syrup
- 1/8 teaspoon salt
- 1 teaspoon vanilla extract
- Cooking spray
Instructionsย
- Spray a 9ร13-inch pan well and set aside. Add cereal to a large bowl.
- In a separate large microwave-safe bowl, add 5 cups marshmallows, 1-1/2 cups chocolate chips, butter, corn syrup, and salt. Microwave in 20-second bursts, stirring well each time (scraping the bottom), until melted and smoothโabout 2 to 4 minutes total. Donโt overheat.
- Stir in vanilla, then quickly pour the mixture over the cereal. Toss until evenly coated. Take your time hereโmake sure every piece is well coated. Stir gently to not crush the cereal.
- Stir in the remaining 1 cup marshmallows and ยฝ cup chocolate chips. Pour into the prepared pan.
- Lightly spray your hands with cooking spray and gently press the mixture into the pan. Donโt press too hard or the bars will be too firm.
- Let sit uncovered at room temp for 1 hour, or refrigerate for firmer bars.

Hello, these sound SO good, but I never buy corn syrup. Is there something else I can use for a substitute?
I havenโt tested it with anything else so I canโt say for sure! So sorry!
We had to use marshmallows without gelatin and not sure if that makes a difference but this did not work at all โน๏ธ
Yeah I donโt see that being a great substitute here; the gelatin is needed to hold things together
I donโt often but milk chocolate, do you think ghirardelli semisweet would work? Iโm trying to imagine it, and having trouble! I donโt want to go to the store!
