The Treat That Made My Mom Famous (Well, Kinda)

Sโ€™mores Cereal Bars are one of my momโ€™s signature desserts. She didnโ€™t come up with the recipe (pretty sure itโ€™s from the back of a cereal box), but sheโ€™s made them for years and is basically โ€œfamousโ€ for them with family and friends.

If you love sโ€™mores, youโ€™ll be hookedโ€”graham cereal, gooey marshmallows, and melty chocolate. They always disappear first at any party.

Theyโ€™ve been one of my favorite treats for as long as I can remember, and even after way too many over the years, I still donโ€™t think Iโ€™ll ever get tired of them!

Sโ€™mores Cereal Bars Ingredients

  • Graham cereal: Use any kind you likeโ€”Golden Grahamsยฎ or a store-brand version.
  • Marshmallows: Softer marshmallows make chewier barsโ€”pick the squishiest bag.
  • Chocolate chips: Pick a good brand so the chocolate melts nicely and tastes rich.
  • Butter + corn syrup: These help everything stick and keep the bars soft.
  • Vanilla: Adds a subtle sweetness and depth to the bars.

How To Make Sโ€™mores Cereal Bars (Tips)

  • Grease the pan: Spray well or use parchment so the bars donโ€™t stick.
  • Microwave slowly: Heat in short bursts, stirring well each time.
  • Donโ€™t press too hard: Gently press the mixture into the pan so bars stay soft.
  • Use a big bowl: Mixing is easier (and less messy) in a very large bowl.
Melt marshmallows, chocolate, and butter together, then mix in the cereal, extra chocolate chips, and marshmallows. Spread the mixture into a pan to create these s'mores cereal bars.

Storage

Sโ€™mores Cereal Bars are best the day theyโ€™re madeโ€”after that, they start to harden and lose texture. They donโ€™t freeze well since the marshmallows get hard after thawing.

Sโ€™mores Cereal Bars

Ingredients

  • 8 cups Golden Grahams cereal see note 1
  • 6 cups miniature marshmallows divided
  • 2 cups milk chocolate chips divided, see note 2
  • 5 tablespoons unsalted butter cut into cubes
  • 1/4 cup light corn syrup
  • 1/8 teaspoon salt
  • 1 teaspoon vanilla extract
  • Cooking spray

Instructionsย 

  • Spray a 9ร—13-inch pan well and set aside. Add cereal to a large bowl.
  • In a separate large microwave-safe bowl, add 5 cups marshmallows, 1-1/2 cups chocolate chips, butter, corn syrup, and salt. Microwave in 20-second bursts, stirring well each time (scraping the bottom), until melted and smoothโ€”about 2 to 4 minutes total. Donโ€™t overheat.
  • Stir in vanilla, then quickly pour the mixture over the cereal. Toss until evenly coated. Take your time hereโ€”make sure every piece is well coated. Stir gently to not crush the cereal.
  • Stir in the remaining 1 cup marshmallows and ยฝ cup chocolate chips. Pour into the prepared pan.
  • Lightly spray your hands with cooking spray and gently press the mixture into the pan. Donโ€™t press too hard or the bars will be too firm.
  • Let sit uncovered at room temp for 1 hour, or refrigerate for firmer bars.

Note 1: Or try Malt O Mealยฎ Honey Graham Toasters.
Note 2:Use high-quality milk chocolate for the best flavor and melt. I like Ghirardelliยฎ or Guittardยฎ. Cheaper brands can be waxy and melt poorly.
Storage: Store bars in an airtight container at room temperature. Best enjoyed the same day theyโ€™re made.

    Hello, these sound SO good, but I never buy corn syrup. Is there something else I can use for a substitute?

    We had to use marshmallows without gelatin and not sure if that makes a difference but this did not work at all โ˜น๏ธ
