Strawberry Jello Parfait Cups

They may look tricky, but they couldn’t be easier! The Jello slant is simply done by propping the cups at an angle in a muffin tin!

To keep them slanted, tuck foil balls, marbles, or even extra paper into the muffin tin. Once set, pour in the strawberry Jello with strawberries and let it fully set. Remove the cups, pour the mousse on top, let it chill, and they’re ready! It takes some time (mostly chilling), but they’re so worth it—one of the best Jello treats ever!

Jello Parfait (Strawberry)

Double-layered Strawberry Jell-O Parfait Cups are a fun treat with a layer of fruity strawberry Jell-O on the bottom and a fluffy, creamy strawberry Jell-O mousse on top—light, sweet, and perfect for any party or refreshing snack!

Jell-O Layer
  • 2 (3-ounce) packages strawberry jell-o mix plus boiling and cold water called for
  • 1 pint strawberries hulled and sliced, about 2 cups, plus 1 for garnish if desired
Jell-O Mousse Layer
  • 2-1/2 cups lemon-lime soda like Sprite, divided
  • 1 (3-ounce) package strawberry jell-o mix
  • 4 ounces cream cheese full-fat, softened
  • 1 (8-ounce) container frozen whipped topping like Cool Whip, completely thawed; plus additional whipped topping if desired for topping
  • Fresh mint optional, for garnish

Instructions 

  • Prepare a 9-cavity muffin pan: use 9 small balls, or wad up balls of foil (or paper) and place in the muffin pan. Place 9 clear plastic cups on top of the balls at an angle (see video at top of this page!) The small balls help to keep the cup at an angle. 
  • Prepare the strawberry Jell-O (both packets) according to package directions (not for quick set, but for regular set). Fill up the cups evenly with Jell-O (be careful as you pour to ensure the cups stay at an angle).
  • Hull and slice the strawberries, then place a few slices of strawberries into each Jell-O cup. Carefully transfer the muffin pan to the fridge and allow the Jell-O to completely set up. When it is nearly set up, you can begin the mousse.
  • Place 1 and 1/2 cups Sprite in a microwave safe bowl or cup and microwave just until the mixture comes to a boil. Whisk the packet of strawberry Jell-O into the Sprite.
  • Transfer the mixture to a high-powdered blender and add cream cheese. Blend until completely smooth. And remaining 1 cup of (cold) Sprite and blend again until smooth.
  • Add completely thawed Cool Whip and blend just until smooth. (You can leave out about 1/2 cup for optional garnish at the end if desired).
  • Pour this mixture evenly over the Jell-O layers (use less of this mousse than the Jell-O, or the mousse tends to be overpowering).
  • Place in the fridge and allow to set completely.
  • If desired, garnish with fresh whipped cream (or 1/2 cup extra cool whip) and garnish with fresh mint and a small strawberry.

Note 1: The yield of this recipe depends on the cups you use. Total time does not include the required chilling time, which is up to 4 hours. I haven’t tried this recipe with low-fat, sugar-free products. They could be fine, but also could end up being too watery or not set up properly.
Storage: Place plastic wrap or airtight lids over the top of each cup to prevent them from drying out or absorbing fridge odors. Keep them in the fridge, where they’ll stay fresh for up to 3 days.

    Awesome recipe! The only suggestion would be to advise readers an estimate on how long it may take the Jell-O to set after adding the fruit. I don’t make Jell-O often and was clueless on how long to wait. Also, the hot Sprite spilled over when I added the Jell-O, so I’d caution readers of that possibility as well. Finally, I’d advise readers on how long it may take the dessert to set after adding the mousse. Thanks for a great recipe!

      Hi Marti! I’ve never tried a sugar free jell-o so I’m really not sure. I think it would be okay, but there is a chance of it potentially being more watery and/or less setup.
