Cut banana into slices about 1/4-inch thick. Place slices on a parchment-paper-lined sheet pan. Place about 1/4 teaspoon of peanut butter on the center of half the banana slices. Add the other half on top and press down gently to form a banana “sandwich.” Place in freezer 15–20 minutes.
Add chocolate chips, 1/4 cup peanut butter, and coconut oil in a microwave-safe bowl. Microwave in bursts of 15 seconds, stirring between each burst for 10 seconds, until chocolate is smooth and melted.
Dip banana bites in the melted chocolate. I like to lay banana bites on the tines of a fork and spoon chocolate over. Tap the fork on the side of the bowl gently to remove excess chocolate and return to the parchment-paper-lined sheet pan. Repeat until all banana bites are dipped in chocolate.
Place chocolate-covered bites back in the freezer until set, about 10–20 minutes. I like them cold but not frozen through. Best enjoyed within a few hours of being made.
Banana “Sushi”
Spread peanut butter evenly over each tortilla. Drizzle honey (to taste preference) on top of peanut butter; sprinkle with granola or chocolate chips evenly over the tortilla.
Place a banana in the bottom half of each tortilla. Roll up tightly, burrito style. Cut into one-inch pieces and serve immediately.
