Any Oreo lover would love these "Lumps of Coal" Mint Oreo Truffles! They're easy to make and perfect for sharing with friends and family this Christmas season!
Blend 16 Oreos (no need to separate cookie from cream) in a blender until fine crumbs form. If the mixture is too wet, add two more Oreos. Pour into bowl.
Add softened cream cheese and mix with a hand mixer until a thick dough forms.
Roll dough into even-sized balls.
Microwave 1/2 cup Andes chocolate chips in a microwave-safe bowl for 30 seconds, stir for 30 seconds, and microwave for another 15 seconds if they aren't fully melted.
Coat truffles in melted chocolate, shake off excess, and place on a parchment-lined sheet pan.
Repeat with remaining chocolate. (I don't melt all the chocolate at once because it tends to harden fast!)
Let truffles harden at room temperature before eating/placing in plastic bags.
